Balsamic and Herb Marinated Baby Roma Tomatoes

 

Servings: 4

 

1lb. Baby Roma Tomatoes

1 t coarse grain Mustard

1/3 C Balsamic Vinegar

1/2 C Extra Virgin Olive Oil

2 T minced Shallots

1 T chopped fresh Chives

1 T chopped fresh Basil

Salt and fresh cracked Black Pepper tt

 

Slice tomatoes in half lengthwise. In a small bowl whisk together vinegar and mustard. Slowly drizzle in olive oil while continuing to whisk. Add in all other ingredients and stir. Pour over tomatoes and refrigerate for no less than 30 minutes to let flavors develop.
